I have cooked polenta from time to time, but not very often. I have a handful of polenta recipes, but for some reason the only one I’ve really used was from the package, which required baking. The recipe was something of a pain and took an hour to bake.
Recently, however, Terry and I were watching Ina Garten’s new Barefoot Contessa series, “Cooking for Jeffrey.” Ina demonstrated a her Creamy Parmesan Polenta recipe. Terry mentioned that she really liked polenta, and would enjoy having it more often. So I tried the recipe. It was easy, quick, and delicious. We had it with Polish sausage and marinara sauce. Terry loved the meal.
I’ll be cooking with polenta more often now.
