turkey quesadillas

I made a slow cooker dish with potatoes, bell peppers, and pre-cooked turkey breast. The recipe I had did not allow anywhere near enough time for the potatoes. Or maybe my pieces were simply to big in comparison to what the author had in mind. In either case it was pretty much a failure.
The turkey slices were, however, highly salvageable. I divided them into two portions and sealed them up with my trusty FoodSaver. I decided to use one of the packets for turkey quesadillas. I thawed the turkey and chopped it. I used sliced cheddar cheese on corn tortillas. I added onion to mine.
It made for a nice light dinner. Terry thoroughly enjoyed it.
We can indeed recover from our cooking disasters.
