marinated grilled chicken
Posted: July 3, 2018 Filed under: Cooking, Recipes Leave a commentSomehow I didn’t realize how few chicken marinades I had in my recipe database. I was looking for one the other day and was surprised how few I had. I need to fix that.
I did find one that was intended to emulate the flavor of El Pollo Loco. It called for white vinegar, garlic, oregano, ground pepper, mild chili peppers, pineapple juice, vegetable oil, and lime juice. I made substitutions, as always. I used rice wine vinegar, crushed red pepper, and orange/peach/mango juice. Rather that using bone-in chicken I used thin sliced chicken breasts. I cooked the chicken on our copper mat on the grill.
It turned out surprisingly well. Terry said I could do that again. That means I need to make a note of the substitutions that I made.
